     Origin: India

Cardamom, Chillies, Turmeric, Onion, Cumin, Cloves, Curry Leaves, Garlic, Mustard, Nutmeg

This French rendition of a classic Indian masala known as Vadouvan powder brings with it more sweet, mellow and garlic-flavour undertones that help to put more emphasis on the key ingredient of your curry. It brings a signature roasted flavour thanks to the process of toasting many of the spices before they are blended with the final ingredients. The result is a complex and deeply flavored blend with prominent aromatic flavour from the onion, shallots, and garlic.

Vadouvan appears to be en vogue at the moment.  A few words about vadouvan…  Vadouvan is a French-ified curry spice blend.  The French influence comes from the addition of shallots and garlic.

Vadouvan's ingredient list can run epically long, but its flavour is blissfully streamlined. It's a sexy, super-savoury blast of spice, just exotic enough, that enhances, rather than masks food. And unlike its mass-produced cousins, it's a curry powder you really can add to most anything.

It's extremely versatile and tastes great with all kinds of mains from Lobster to Glazed Ribs, Biryani to Spice Crusted Lamb, Grilled Sole or Cod Fish, Roasted Carrots, Corn Soup, Scrambled Eggs....the list goes on.

This is a spice to have fun with, foodie fuss aside. And once you get to know it better, it'll be a pantry staple before you know it.

    How do you use vadouvan?

To use it as a base for curry, make a paste by mixing equal parts spice, olive oil and water. To make a thinner paste to use in a basting method for grilling, add a bit more of the liquids. Add to dressings and marinades. Flavor poultry, salads, seafood, and veggie dishes. Mix with softened butter for a compound butter, then spread on bread for flavour crostinis.

    Cooking With Vadouvan

This is a very delicate blend which means it will not hold up to a long or high heat cooking process as that would essentially cook off all of the great subtleties. For those processes, try adding it toward the end of the cooking time so the flavour will shine.

Our Vadouvan Spice is freshly ground and packed for maximum flavour.
