    Pumpkin seeds—also known as pepitas—are flat, dark green seeds. Some are encased in a yellow-white husk (often called the "shell"), although some varieties of pumpkins produce seeds without shells. Pumpkin seeds have a malleable, chewy texture and a subtly sweet, nutty flavour.

    Roasted pumpkin seeds are a crunchy and healthy snack you have to make! We have both sweet and savoury pumpkin seed recipes to satisfy your tastebuds. Roasted pumpkin seeds are a healthy, crunchy snack that is gluten-free, paleo, vegan, and totally delicious! Roasted pumpkin seeds are very mild in flavour, making them a great base for seasonings like we use in the recipes below. The texture after roasting is super crispy and crunchy. It’ll definitely satisfy your crunchy snack cravings!

    Roasted or raw pepitas can be used in a variety of ways:

    • Sprinkle pumpkin seeds on green salads and stir into fruit salads, like Waldorf or pear salads.
    • When making smoothies, blend pepitas with fresh fruit for a boost of protein and a slightly sweet and nutty flavour.
    • Serve on pizzas, soups, pasta, grilled veggies or fresh-cooked fish entrées.
    • Add pumpkin seeds to healthy sautéed vegetables.
    • Grind pumpkin seeds with fresh garlic, parsley and cilantro leaves. Mix with olive oil and lemon juice for a tasty salad dressing.
    • Add chopped pumpkin seeds to your favourite hot or cold cereal.
    • Add pumpkin seeds to your oatmeal raisin cookie or granola recipe.
    • Next time you make burgers, whether it be from vegetables, turkey or beef, add some ground pumpkin seeds.

    Pumpkin seeds can be eaten raw or roasted. To roast pumpkin seeds with or without the husks, first lightly coat them with melted butter or canola or olive oil on both sides. Lay out evenly on a baking pan and let dry overnight. Roast in a 180 degree oven for 15 to 20 minutes, stirring occasionally. Season while hot with coarse sea salt or a mixture of cayenne pepper and honey for a naturally sweet-and-spicy snack.
